Aval Upma | Easy Breakfast Recipes

Aval Upma is easy and healthy Breakfast recipe. It can be prepared in less than 15 minutes with less ingredients. This recipe can be prepared in many ways.

I always prefer instant recipes rather cooking for an long time. For this month Friendship 5 series , need to post Instant Breakfast recipes.

Aval upma




Ingredients

Aval/Poha          1 cup

Onion                  1 Nos

Green chilli         2 Nos

Ginger                 1inch

Channa Dal         1 tsp

Mustard seeds     1 tsp

Turmeric Powder 1/4 tsp

Curry Leaves       a spring

Salt to taste

Method

Wash and soak Aval in a warm water. The water is enough to immerse the Aval,add turmeric powder and salt to this and mix well . Keep it until all the water get absorbed by Aval.

Heat oil in a pan , add mustard seeds and curry leaves. Once splutter add channa dal ,Ginger,Green chillies and cook for a minutes.

Now add Onion and saute till translucent and then add Aval and mix well and cook it in low flame.

Cook for a minute and switch off the flame

Elvis Presley’s Pound Cake

Posting the recipe after long back. For this month Baking Partner's Challenge Pound cake was suggested by Sawthi. Its really came out very soft and spongy.If you are calorie watcher check out this Butter-less Pound cake.





Ingredients

Butter                         1/2 cup

Cake  Flour                1 1/2 cup

Sugar                          1 1/4 cup

Egg                             31/2 Nos

Salt                             1/4 tsp

Vanilla Essence          2 tsp

Heavy Cream             1/2 cup


Method

Generously butter pan and dust with flour, knocking out excess flour, line the bottom  of the pan with parchment paper.

Once you sifted the homemade cake flour for 5 times, then add salt and sift together once again. If using cake flour then you need to sift only 3 times.


Beat together butter and sugar in a large bowl until pale and fluffy.Add eggs 1 at a time, beating well after each addition, then beat in vanilla.

Add half of flour, then all of cream, then remaining flour, mixing well after each addition.

Transfer the batter into pan and tap the pan against work surface once or twice to eliminate air bubbles.

Place pan in (cold) oven and turn oven temperature to 350°F. 

Bake until golden and a wooden pick or skewer inserted in middle of cake comes out with a few crumbs adhering.It may take 1 to 1 1/4 hours. 

Cool cake in pan on a rack 30 minutes. Run a thin knife around inner and outer edges of cake, then invert rack over pan and invert cake onto rack to cool completely.

Note

I used 1 cup all purpose flour + 2 tablespoon cornstarch to make 1 cup of  cake flour, in a measuring cup add 2 tablespoon of cornstarch first and then add all purpose flour.

Chocolate Whopie Pie


I reserved this recipe for Valentines day but somehow couldn't able to post on that day.Chocolate whoopie Pies combination of moist and soft domed shaped chocolate cookie.The buttermilk and coffee makes the batter soft and moist.

Ingredients

All Purpose Flour                    1 ¾ cup

Butter                                       ¾ cup

Unsweetened Coco powder     ¾ cup

Baking Powder                        1 tsp

Baking Soda                             ¼ tsp

Salt                                           ¼ tsp

Sugar                                        ¾ cup

Egg                                            1 No

Buttermilk                               ¼ cup

Lukewarm Coffee or water    ½ cup

Vanilla Extract                       1 tsp

Vanilla Filling

Butter                              ¼ cup
Vegetable shortening      ¼ cup
Confectioners’ Sugar    1 cup (Sifted)
Vanilla Extract               1 ½ tsp
Corn Syrup                     1/3 cup

Method
Preheat the oven to 350 degree F. Grease or line baking sheet with parchment paper.
In a mixing bowl, sift together all purpose flour, coco powder, baking powder, baking soda and salt.




In a mixing bowl using electric hand mixer or stand mixer beat butter and then add sugar beat still creamy and fluffy.


Add eggs and beat well. Add vanilla extract and beat until combined. 


Mix the buttermilk and water or coffee in cup.Now add the flour mixture and buttermilk in three additions starting and ending with the flour.
Drop tablespoon of batter into a prepared baking sheet, spacing about 2 inches apart. With moistened finger or back of the spoon shape the cookies.


Bake for about 10 -15 minutes or until the top of the cookie spring back. Remove from oven and cool it on wire rack

Vanilla Filling
Beat the Shortening and butter until soft and creamy .Gradually add sugar and beat until light and fluffy.

Then add vanilla extract and beat in low speed until combined. Finally drizzle in corn syrup and beat until soft and fluffy.

To Assemble
Take one cookie and spread a tablespoon of filling on the flat side of the cookie.Top it with another one.
