Beetroot Kootu



Before marriage i never know we can make kootu and Thogayal other than poriyal using beetroot.
Its my MIL recipe,she used to cook Dal and vegetables separately for kootu. But due to my laziness and to save some time i always use a pressure cooker to make a kootu. Because of that my MIL thinks it doesn't taste like as traditional. But me and husband didn't feel any difference in the taste. So who lazy like me and want to some time you can use pressure cooker to do this recipe.




Beetroot                1 Nos (cubed)

Onion                   1 Medium

Tomato                1 No

Green Chilli          4 No

Turmeric powder   1/4 tsp

Sambar powder /Chilli Powder   1 tbsp

Fennel seeds          1 tsp

Curry Leaves         5 -6 Nos

Salt to taste


Take all ingredients except fennel seeds in a pressure cooker.  Cook for 4-5 hisses.

Once the steam goes, heat oil in a pan add fennel seeds and curry leaves.

Once splutter, add this tempering into the cooked beetroot and let it boil for 5 minutes.

Garnish with coriander leaves and serve hot with Roti or rice.

If you feel beetroot will taste more sweet add more green chillis or chilli powder according to your spice
level.
