Butter less Vanilla Pound cake



I wanted to try a vanilla cake without butter, because my hubby in strict weight loss diet. Replaced the butter with olive oil and it came out well . Its so moist and and soft.
               


All purpose flour            11/4 cup

Egg                               2 Nos

Olive oil                        1/4 cup

Sugar                           3/4 cup

Milk                            1/4 cup

Vanilla extract             1 tbsp

Baking powder          1/2 tbsp

Walnuts                     1/4 cup (optional)


Preheat the oven to 350 F.

Beat the egg well. Add sugar and beat well until it dissolves.

Now add oil , milk and beat well.

In a bowl sieve all purpose flour and baking powder.

Gradually add egg mixture to the flour and mix well. Finally add vanilla extract and mix well.

Grease the loaf pan with oil / butter and pour the mixture to the pan. Fold in the nuts in the mixture

Bake it for 50 - 55 minutes or till the tooth pick come out as clean.(Mine is done in 55 minutes).
