Papaya Kesari


Kesari is a basic sweet dish prepared in every south Indian home during festival. The same sweet in North India it referred as Soji Halwa.It is simple and easy recipe made in less time.Whenever sudden guest came i used to prepare this sweet. Adding papaya puree to this sweet makes healthy twist. Second time making this papaya kesari and really tastes good.








Ingredients

Rava                   1/2 cup

Water                  1 cup

Sugar                  1 cup

Papaya Puree     1 cup

Cardamom        2 -3 Nos

Ghee                3 -4 tsp

Cashew           few

Raisins           few

Kesar color   a pinch (Optional)

Method

Powder the sugar and cardamom.

Heat 2 tsp of ghee in a pan, fry cashews and raisins and keep aside. In a same pan roast the rava for 5 -8 minutes or until nice aroma comes.

In a heavy bottom pan add water and let it boil. Once boiled add rava slowly and stir continuously with out any lumps.

Once rava cooked add papaya puree and sugar and mix continuously. Add some more ghee.

Once the kesari leaves from side add cashews and raisins and mix well. Switch off the stove and serve.
