Lemon bars
From the day when i saw the lemon bars click on the cover page of "Enjoy cooking with Costco way" book , i wanted to try that recipe. But somewhat i heisted to try how it will be taste. For this month Baking Partner challenge Suja of Kitchen Corner Try it suggested Lemon bars and Chocolate Walnut Bars i immediately decided to try this Lemon bar.
Ingredients
For the crust
All purpose flour 1 cup
Sugar 1/2 cup
Butter 1/2 cup / 1 stick
Salt a pinch
For the Topping
Egg 2 Nos
Sugar 3/4 cup
Lemon Zest 1 tsp
Lemon Juice 1/4 cup
All purpose Flour 3 tbsp
Milk 1/2 cup
Salt 1/8 tsp
Powder sugar for dusting
Method
To Make the crust
Preheat oven to 350 degree F. Line parchment paper in 8 inch square pan and keep aside.
In the bowl, cream sugar and butter until light fluffy. Add salt and flour ,beat on low speed until dough formed.
Dump the crust into prepared pan and using fingers to press the dough into bottom of the pan.Bake for 15- 20 minutes until edges are browned.
Using the fork prick crust and cool it in a wire rack
To make filling
In a bowl , whisk eggs and sugar together until combine and thick.Add milk , flour,lemon zest and lemon juice one by one and mix well.
Pour the mixture into the baked crust still its warm.Bake it again for 18-20 minutes until firm to touch.
Cool in room temperature and refrigerate for an hour before cutting into bars.
Dust the top with powdered sugar and then serve.
