Spinach Strawberry Chocolate Cupcake


For this  month "Shhh Cooking secret Ingredients" group was started by Priya of Priya's Versatile recipes, i paired with Sonali Phatak Mahajan she gave me spinach and strawberry as a secret ingredients. The day since she gave the ingredients I'm thinking what can i make with this ingredients.Finally i deiced to do bake with spinach and strawberry .  When i Google about it,i found this recipe here. The original recipe used blueberry , i replaced it with strawberry.This recipe is good for picky eater kids. They cant find the hidden ingredient






Ingredients

For the Spinach & Strawberry puree

Chopped spinach                             2 cup

Chopped strawberry                        1 cup

lemon Juice                                     1 tsp

Water                                              1 tbsp (If required)

For Cupcake

Wheat flour                                     1/2 cup

All purpose flour                             1/2 cup

Egg                                                 1 no

Spinach & Strawberry Puree         3/4 cup

Butter                                              4 tbsp

Chocolate chips                             1/3 cup

Coco powder                                 2 tbsp

Baking powder                              2 tsp

Vanilla Essence                            1 tsp

Salt                                               1/4 tsp

Method

For Spinach & Strawberry Puree

Wash and chop spinach. Bring water and spinach to boil and then simmer for minutes

Wash and chop the strawberry.

In a blender , blend cooked spinach , strawberry along with lemon juice and water until smooth.



For cupcake

Preheat the oven to 350F and line the muffin tray.

In a microwave safe bowl melt the chocolate butter along with chocolate chips in microwave for 30sec.

In a mixing bowl , combine melted butter and chocolate chips,pureed spinach ,egg,vanilla and sugar.

Whisk together the dry ingredients , wheat flour,all purpose flour,baking powder and salt.

Combine dry ingredients into wet ingredients slowly until combine.

Pour the batter into muffin liners and bake it for 20-25 minutes.

Cool it wire rack and then serve.
